Factors influencing how to prepare and serve an espresso coffee and a perfect Italian cappuccino are many but in particular can be summarized in the famous Italian rule of 4M.
1 M – Miscela: the blend
The coffee blend (Miscela) is the starting point for a quality espresso. In addition to the quality of the product it is necessary that the preservation took place in a cool environment, free of unpleasant odours and humidity.
2 M – Macinacaffè: the coffee grinder
The coffee grinder (Macinacaffè) is a fundamental tool that grinds the coffee beans into powder and delivers the right dose for espresso extraction. Through the coffee grinder it is possible to adjust the degree of grinding of the coffee powder which is necessary to press inside the infusion filter. The correct grinding of the coffee must take place in 25-30 seconds
3 M – Macchina: the coffee machine
The coffee machine is the tool that allows us to get the drink. The coffee machine through a pump mechanism coupled with a heat exchanger sends the boiling water to the dispensing unit which distributes it evenly over the coffee panel for infusion and subsequent dispensing. The two most important variables in the operation of an espresso machine are the water temperature, which must be fresh with a temperature of about 90°, and the pressure, which must reach 9 atmospheres
4 M – Mano: the hand of barista
The dexterity of the operator is the factor that makes the difference. The skills of a bartender must concern the choice of the most suitable blend for the taste of its customers, the degree of grinding, the dosing of the filter, the pressing of the powder with a force of about 20 kg to make it compact at the right point, thre cleaning and maintenance of equipment.
Here are some precise guidelines to correctly set the coffee grinder in order to obtain a high quality Italian espresso.
We start from the principle that, in order to obtain a coffee, the coffee must come into contact with hot water to extract the substances that influence perfume, aroma and the body of the coffee.
The right coffee grind is therefore a fundamental element that regulates the correct extent of contact between coffee and water. But what if the coffee grind is too fine or too coarse?
- If ground too finely, the water takes too long to filter through, and the coffee is in contact with the water too long, leading to the possibility of the coffee burning, leaving a bitter taste and a thin, dark crema.
- If ground too coarsely, the water, passing at high speed, is not able to extract all the positive substances within the coffee. This would result in a watery flavour, with little body and a pale crema.
To obtain an excellent espresso you can follow this rule: after correctly compacting (tamping) the coffee using a professional espresso machine, a quality espresso can be obtained by extracting a cup (25 ml) at an interval of 22-27 seconds. The espresso will then exhibit a hazelnut-coloured crema with dark nuances, a full body and an intense aroma.
TECHNOLOGY

DESIGN
The Gaggia Brera has a stainless steel front panel, giving it a professional look suitable also for environments outside the kitchen. The body is not entirely made of steel: the side panels and the control knob are plastic. Despite its large size, the Gaggia Brera is not very large in terms of water capacity (1.2 L) and grounds repository (8 servings).
USE
The Gaggia Brera allows you to obtain a quality espresso thanks to the Aroma Select mechanism. After grinding the beans, the machine automatically doses the coffee and proceeds with dispensing. The quantity of coffee dispensed is also programmable for the two main options: espresso and standard coffee. The digital display makes navigation quick and easy. The class A energy rating and the auto-shutdown system allow low energy consumption. The Gaggia Brera also has a milk frother to prepare hot water, tea and infusions.
MAINTENANCE
Each operation involves a rinse cycle. It is therefore necessary to always have an empty cup within reach of the dispenser. Cleaning and maintenance remain a little complicated, especially because of the coffee sensors that easily become blocked, and must be kept clean. The descaling cycle is a little complicated and laborious. The elegant exterior of the Gaggia Brera clearly requires a lot of cleaning.
